Three foods you need to try this St. Patrick’s Day!

With St. Patrick’s Day right around the corner, I’ve put together a list of the top three desserts to make this St. Patty’s Day. To stay on theme, all the recipes will include green ingredients.

The first recipe is mint chocolate chip ice cream sandwiches. You will need thin mint Girl Scout cookies and mint chocolate chip ice cream. Place one cookie on its back, then take a scoop of ice cream and place it on the cookie, and then just place another cookie on top. It’s as simple as that!

The second recipe is a mint shake. For 2 servings, you will need 1 pint of vanilla ice cream, ¼ cup of whole milk, ½ teaspoon of peppermint extract, ½ teaspoon of vanilla extract, and whipped cream. Blend the ice cream, milk, peppermint extract, vanilla and food coloring in a blender until it’s smooth. Pour into one or two glasses and add the whipped cream on top, or even your favorite St. Patrick’s Day sprinkles.

The third recipe is mint chocolate chip brownies. You will need any brownie mix and chocolate chips for the actual brownie part. Follow the directions on the box and just add a few chocolate chips into the mix. After the brownies are out of the oven and they are cooling, make the filling. You’ll need ½ cup of softened unsalted butter, 2 cups of confectioners sugar, 4 squirts of green food coloring, and a dash of peppermint extract. Use an electric mixer on medium speed and beat the ½ cup butter and confectioners’ sugar together until well blended. Then fold in the food coloring and peppermint extract. Spread this on the cooled brownies for the perfect St. Patrick’s Day sweet.
