Spring cookout recipes
As April comes to an end and the weather begins to finally warm up, it is a great time to gather up some friends and have a cookout. From a small get together to a large party, there are endless quick and tasty food options to grill up for a nice end of the school year/ graduation cookout. Here are a few basic recipes that are super easy to make this coming May through the summer.
These kebabs are super easy to make and are completely customizable to include whatever veggies you prefer. Also, these kebabs as can be cooked on a grill or in the kitchen on a stovetop.
Obviously, most people know how to make burgers, but these are just some tips to make sure whether you are cooking on a grill or on a stovetop, you are getting the best results.
Ingredients: yields 6 kebabs
- 1 red bell pepper
- 6 white mushrooms
- 1 small sweet potato
- 1 zucchini squash
- ½ whole onion
- ½ cup soy sauce
- ½ cup lemon juice
- ½ cup olive oil
First you are going to cut your veggies into large pieces that you can easily skewer with your kebab sticks. For the pepper you’ll want to cut it into about 1 ½ in. square pieces. For the mushrooms just cut each in half. For the sweet potato make sure your pieces are a bit smaller in comparison to the size of the other veggies because they take a bit longer to cook. Cut the onion and zucchini to a similar size as the pepper.
Next you need to marinate the veggies for about 1-2 hours. To make the marinade combine the soy sauce, lemon juice, and olive oil in a large bowl or Tupperware container. Place your veggies in the marinade and let sit in the fridge for 1-2 hours.
After marinating, remove the veggies from the marinade and place them on the skewers (preferably metal but wooden works as well). The way that you arrange them is completely up to you, but I would recommend finding a pattern and just repeating with every vegetable until you run out. This makes about 6 skewers worth of kebabs.
Turn on your grill or stovetop with cast iron pan and allow it to heat up for a few minutes. After allowing it to heat, place the kebabs, either directly onto the clean grill/ pan or onto a kebab rack if you have one. Allow the kebabs to grill until you see some charing around the veggies and then turn them. Keep turning until you achieve your desired cook (about 10-15 mins on grill).
Plate your kebab vegetables either on the skewer or off and enjoy.
One great dish to pair you kebabs with is a burger. Here are some tips to cooking a burger on the grill.
Seasoning (salt, pepper, etc.)
Add ins (onions, cheese, steak sauce, etc)
Take about a tennis ball sized portion of beef for each patty. For cooking on the grill you are going to want to season your beef before you assemble the patty. Do this by adding a generous amount of salt and pepper to the meat. For a patty on the stove, just leave the meat unseasoned for now. This is also the point where you can mix in any add ins such as cheese or onions into your burger if you want.
Form the patties and make a small dent in the center with your thumb to help the burger to cook evenly and keep the burgers’ shape while cooking. Place the patties either directly onto a hot grill. If you are cooking on the stove then make sure to heavily season one side of the patty with salt and pepper before placing seasoned side down in the pan. Then use your spatula to flatten out the patty a bit.
Allow the burgers on the stove to cook for around 2 minutes on each side and the burgers on the grill to cook for around 3 ½ minutes on each side. Add cheese after the first time you flip the burgers if you want.
Assemble the burger however you want and enjoy!
